Ingredients
1 pound Brussels sprouts
1 Pink Lady apple - peeled, cored and diced
2 tablespoons olive oil
1/4 teaspoon salt
3 ounces diced pancetta
1/4 cup thinly sliced red onion
1 clove garlic, chopped
1/2 head radicchio, outer leaves and core removed, quartered
1 tablespoon apple cider vinegar
1 tablespoon honey

Directions
Preheat oven to 475 degrees F.
Slice ends off of Brussels sprouts and remove outermost leaves. Slice thin with a knife or use a food processor fitted with a slicing blade.
Toss sprouts and diced apples with olive oil and salt.
Line a sheet pan with Aluminum Foil and roast sprouts and apples for 20 minutes, stirring after 10 minutes.
In a skillet over medium heat, cook pancetta until crisp, about 5 minutes. Remove pancetta and leave 3 tablespoons of the grease.
Add the onion and garlic and cook about 2 minutes. Add the radicchio, separating the quarters and stir until the leaves wilt. Add Brussels sprouts and pancetta, and toss to combine.
Add vinegar and honey.

1 ½ cups white sugar
1 cup light brown sugar
1 cup butter, melted
2 eggs
1 tablespoon vanilla extract
3 cups pumpkin puree
4 cups all-purpose flour
2 tablespoons ground cinnamon
1 tablespoon baking powder
1 tablespoon baking soda
1 teaspoon ground nutmeg
½ teaspoon ground cloves
½ teaspoon salt

Step 1
Preheat oven to 350 degrees F (175 degrees C).
Step 2
Mix white sugar, brown sugar, and melted butter together in a large bowl. Stir in eggs and vanilla extract; mix in pumpkin until thoroughly combined.
Step 3
Whisk flour, cinnamon, baking powder, baking soda, nutmeg, cloves, and salt together in a separate bowl. Mix flour mixture into pumpkin mixture until incorporated. Pour batter into three 5x9-inch loaf pans. Smooth batter evenly in each pan.
Step 4
Bake in the preheated oven until a toothpick inserted in the middle of each loaf comes out clean, 45 to 50 minutes.

4 raw chop with refuse, 106 g; yields excluding refuses (3/4 inch) thick pork chops
1 teaspoon vegetable oil
2 tablespoons brown sugar
salt and pepper to taste
⅛ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
2 tablespoons unsalted butter
2 medium (2-3/4" dia) (approx 3 per lb)s tart apples - peeled, cored and sliced
3 tablespoons pecans
Directions
Step 1
Preheat oven to 175 degrees F (80 degrees C). Place a medium dish in the oven to warm.
Step 2
Heat a large skillet over medium-high heat. Brush chops lightly with oil and place in hot pan. Cook for 5 to 6 minutes, turning occasionally, or until done. Transfer to the warm dish, and keep warm in the preheated oven.
Step 3
In a small bowl, combine brown sugar, salt and pepper, cinnamon and nutmeg. Add butter to skillet, and stir in brown sugar mixture and apples. Cover and cook until apples are just tender. Remove apples with a slotted spoon and arrange on top of chops. Keep warm in the preheated oven.
Step 4
Continue cooking sauce uncovered in skillet, until thickened slightly. Spoon sauce over apples and chops. Sprinkle with pecans.

In a small bowl, mix together cinnamon, nutmeg, ginger and cloves. Store in an airtight container.

1 teaspoon ground cinnamon

Whisk flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger, and salt together in a separate bowl. Add to pumpkin mixture; whisk just until combined.
Spray a griddle or frying pan with cooking spray; heat over medium-high heat.
Pour 3 to 4 tablespoons batter for each pancake onto the hot griddle and flatten batter slightly with a spoon.
Cook until small bubbles appear, about 2 minutes.

2/3 cup half and half
2 large eggs
2 teaspoons white sugar
1 teaspoon vanilla extract
1/8 teaspoon salt
3 cups tightly-packed cubed cinnamon raisin bread
2 tablespoons all-purpose flour
2 tablespoons light brown sugar
1/8 teaspoon ground cinnamon
2 tablespoons unsalted butter
1/8 teaspoon salt
1/2 cup maple syrup, or to taste (optional)
Directions
Preheat the oven to 350 degrees (180 degrees C). Butter a standard-size 6-muffin tin.
In a large mixing bowl, whisk together half and half, eggs, sugar, vanilla, and salt until well blended. Add bread cubes to liquid mixture; stir to coat all bread pieces. Divide batter evenly into the prepared muffin tin.
To prepare streusel, toss flour, brown sugar, and cinnamon together in a bowl. Cut cold butter into small pieces, then toss with flour mixture. Using a fork or pastry knife, cut the butter into the dry ingredients, until the mixture looks like a combination of coarse sand and small pebbles. Distribute streusel evenly over the 6 muffins.
Bake muffins in the center of the preheated oven until golden brown, 35 to 40 minutes. Cool muffins on a rack for 5 minutes. Drizzle with maple syrup, and serve warm.
