Ingredients
2 cups grated zucchini
2 eggs, beaten
½ cup all-purpose flour
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese
¼ cup chopped onion
salt to taste
2 tablespoons vegetable oil
Directions
Place zucchini, eggs, flour, Parmesan cheese, mozzarella cheese, onion, and salt in a medium bowl; stir until well combined.
Heat oil in a skillet over medium-high heat.
Scoop tablespoonfuls of zucchini mixture into hot oil and fry, working in batches, until golden brown, about 2 minutes per side.

Ingredients
¾ pound fresh green beans, trimmed and halved
½ pound red potatoes, quartered
1 large onion, sliced
1 pound smoked sausage, cut into 1 inch pieces
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon vegetable oil
1 teaspoon butter
⅓ cup water
Directions
Preheat an outdoor grill for high heat.
Place green beans, red potatoes, onion, and sausage on a large sheet of foil. Season with salt and pepper, sprinkle with oil, and top with butter. Tightly seal foil around the ingredients, leaving only a small opening. Pour water into the opening, and seal.
Place foil packet on the preheated grill. Cook 20 to 30 minutes, turning once, until sausage is browned and vegetables are tender.

Ingredients
4 cups sliced yellow squash
½ cup chopped onion
¼ cup water, or more as needed
35 buttery round crackers, crushed
1 cup shredded Cheddar cheese
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
ground black pepper to taste

Step 1
Preheat oven to 400 degrees F.
Step 2
Place squash and onion in a large skillet over medium heat. Pour in water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
Step 3
Mix cracker crumbs and cheese together in a medium bowl. Stir half of the cracker mixture into the cooked squash and onions.
Step 4
Mix eggs and milk together in a small bowl, then add to squash mixture.
Step 5
Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into the prepared baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
Step 6
Bake in the preheated oven until lightly browned, about 25 minutes.
Baked Honey Mustard Chicken
This honey mustard chicken is quick and easy to prepare, and the kids love it, too!

Ingredients

6 skinless, boneless chicken breast halves
salt and pepper to taste
½ cup honey
½ cup prepared mustard
1 teaspoon dried basil
1 teaspoon paprika
½ teaspoon dried parsley
Directions
Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray.
Season chicken breasts with salt and pepper. Place in the prepared baking dish.
Combine honey, mustard, basil, paprika, and parsley in a small bowl; mix well. Pour 1/2 of the honey mustard mixture over chicken and brush to cover.
Bake in the preheated oven for 30 minutes. Turn chicken pieces over and brush with remaining honey mustard mixture. Continue baking until chicken is no longer pink and juices run clear, 10 to 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
Let cool 10 minutes before serving.
Marinated Flank Steak

Ingredients
Marinade:
½ cup vegetable oil
⅓ cup low-sodium soy sauce
¼ cup red wine vinegar
2 tablespoons fresh lemon juice
1 ½ tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
2 cloves garlic, minced
½ teaspoon ground black pepper
Steak:
1 (1 1/2-pound) flank steak
Directions
Gather all ingredients.
Whisk together oil, soy sauce, vinegar, lemon juice, Worcestershire sauce, Dijon mustard, garlic, and pepper for marinade until thoroughly combined. Place steak in a 9x13-inch glass baking dish.
Pour marinade over flank steak in the baking dish; turn several times to coat thoroughly with marinade. Cover, and refrigerate for 2 to 6 hours, or up to 12 hours if you have time.
When ready to cook, preheat an outdoor grill for medium-high heat and lightly oil the grate.
Remove steak from the marinade and shake off excess. Discard the remaining marinade.
Cook steak on the preheated grill for about 5 minutes per side, or to desired doneness.
Remove from the grill and let rest for 5 minutes before slicing and serving.
Tips
You can use regular soy sauce, if preferred.

2 skinless, boneless chicken breast halves - cut into bite-size pieces
1 clove garlic, crushed
½ cup all-purpose flour
½ cup margarine
¼ cup fresh lemon juice
½ cup chopped fresh mint leaves
Directions
In a medium bowl, mix together the chicken pieces and garlic. Toss with the flour just to coat, and shake off excess.
Heat the margarine in a large skillet over medium-high heat. Add the chicken pieces; cook and stir until browned. Add the mint leaves and lemon juice, cover and steam for about 5 minutes, just until the chicken is cooked through. Do not over cook the chicken or it will be tough.
